Pre-heat the oven to 175℉ (350℉).
Mix together all the herbs, spices and seasonings.
Remove the pizza dough from the packaging and roll it out. To make crispy crackers, you will need to get your dough as thin as possible, so you may need to roll it out further with a rolling pin. Thicker dough will produce softer crackers.
Brush the oil over the whole dough.
Sprinkle the spice mixture all over the dough.
With a pizza slicer, cut the dough into 16 thin triangles, starting with cutting the dough into quarters and working from there.
Place the triangles onto a large baking tray and sprinkle with the mozzarella.
Bake for around 15-20 minutes, depending on how you want your crackers. The longer they are in the oven, the crispier they are.
Serve warm with your favourite dip, or allow to cool. If not eaten the same day, the crackers do lose their crunch (but still taste great).
